Amazing Etivaz: come to an exclusive limited-availability tasting…
On Wednesday 2nd September Andy and Kathy will be holding an exclusive tasting to share with you the story of Etivaz.
Etivaz is one of those cheeses that cheesemongers dream about. It’s very special.
Last month Andy and Kathy went to visit Frederic and Irene Chabloz, one of the few producers of Etivaz cheese. Perched 1550m high on the side of a mountain, they make Etivaz in their small Alpine chalet.
When the winter snow has melted and the skiers have left, they trek up the mountain with their 24 cows to make this special cheese from 3rd June to 10th September each summer.
Etivaz is a true step back into tradition, an ancient way of making Gruyère – using milk made from grazing on the best lush Alpine herbs, and heated gently over a burning log fire.
Come find out about this amazing cheese at 7pm at The Brasserie in The Courtyard (Settle).
**Pre-booking is essential for this event as places are limited. The entrance charge is a nominal £15, which includes the tasting, a glass of wine and a £10 voucher to spend in the shop!**
