Meet Mike – maker of Young Buck cheese | An exclusive tasting

Michael Thomson created Young Buck cheese in 2013 after stints making cheese at Sparkenhoe Farm, Montgomery’s and Stichelton.  Relocating back home he wanted to create Northern Ireland’s first raw milk blue.

Michael visited The Courtyard Dairy and carried out a special tasting to hear the interesting story behind Young Buck: a guided tasting of Young Buck through its development, as well as tasting a variety of different batches.  Also present was  Tom Croppe, an award winning cheese-maker from County Cavan in Ireland, who will chat about how he developed his wonderful cheeses.
