Corra Linn and Wild Garlic Pesto – cheese-maker Selina Errington’s recipe

Corra linn recipeCheese-maker Selina Errington of Errington’s Cheese has a favourite way to cook her creation that is Corra Linn – turn it into an amazing pesto!

A good bunch of wild garlic
150g grated Corra Linn
100g roasted hazelnuts and chopped
150mls Extra Virgin Olive Oil
Squeeze of lemon juice
Salt & Pepper

Corra linn pesto recipeMethod
Put everything in a food processor and wiz until blended.
Mix into boiled pasta (“I also put a splash of cream into it to make a bit smoother for my young children“) or similar; also good with fish.
