More about this
Starting out as a dairy farmer, Martin Moyden loved listening to his Grandma as she told tales of her cheese-making days. Deciding in 2005 to have a go at it himself, Moyden’s Handmade Cheese was born!
Now Martin and his wife, Beth, have given up farming solely to focus on making cheese. Still sourcing milk from a single herd on a nearby farm in the Shropshire plains, they make a range of cheeses of which their original and most-well known, Wrekin Blue, still stands out as the finest.
A French recipe, with a British twist, it is supple in texture, with open pockets in which the blue forms. Wrekin Blue is then matured traditionally until it develops a full flavour and blue-bite, at about three months old.
