This cheese and charcuterie cheese selection box includes:
St Sunday. Pasteurised cows’ milk. 220g.
Based on the famous soft cheeses of the Alps, Reblochon and Vacherin, St Sunday has buttery-crème-fraiche richness and soft, glossy-texture.
Using fabulous quality organic milk from James Robinson’s family farm in south Cumbria, local cheese-maker Martin Gott uses years worth of expertise to transform this rich milk into a supple cheese that rivals its French counterparts but has a hint of English terroir to it.
Doddington. Unpasteurised cows’ milk. 250g
Crystalline and powerful, this 2 year old Doddington is made using a hybrid of cheese-making techniques – it has echoes of Parmesan, Cheddar and aged Gouda – yet cheese-maker Maggie’s original main influence was Red Leicester!
Using fresh milk straight from the family’s cows, the cheese is handmade everyday on their farm. It is then aged for over a year to allow the strength and crystalline nature to develop, akin to good aged Gouda. When matured it develops a sweetness with a sharp savoury finish.
Sparkenhoe Blue. Unpasteurised cows’ milk. 250g.
Famous for their red Leicester, the Clarke family diversified further into blue-cheese production when their son Will returned to the farm. Using milk from their 150 cows he decided to develop a classic a British ‘rinded’ blue akin to the classic British blues made in the region. The end result in Sparkenhoe Blue is a cheese of its own: a mellow blue, with dense- fudgey texture, and a savoury finish.
Charcuterie. 2 x 90g+
Made by famous Italian butchers Falorni, who have been curing traditional pork in Tuscany since the 1700s.
1 pack of the 18-month air-dried ham in the traditional Italian style.
1 pack of Fennel Salame a classic Italian-style salame seasoned with fennel.
This product will have two weeks’ shelf life from the date of delivery. Conveniently, at checkout you can choose a delivery date even well in the future if you would like your cheese delivering for a different event.
