Normally sold at 9–12 months old, every year The Courtyard Dairy ages just two wheels of Templegall to an extra special two-years-old, reserve profile. These have been released today – exclusive to newsletter subscribers first, in this special tasting box.
You’ll get a wedge of each of the 12-month and 24-month versions, allowing you to taste the difference between the age profiles and see how maturation affects this award-winning cheese.
The maker, Jean-Baptiste, trained as a professional cheesemaker in the Comté region. In 2016 he visited Ireland… and never left. Templegall is his creation: Ireland’s answer to Comté. It is crystalline with toasted hazelnut and browned butter flavours, deepening into rich, savoury umami flavours.
Winning both the Irish Cheese Awards ‘Supreme Champion’ and the Artisan Cheese Awards ‘Supreme Champion’ in 2024, this is a cheese worth seeking out.

In 2001 Dan Hegarty and his brother John decided to diversify their farm and start producing cheese from the family’s own herd of Irish Friesian cows milked by Dan and John’s Dad, Jim, developing a traditional farm-made Cheddar.
In 2016 they employed Frenchman Jean-Baptiste Enjelvin to help out on the cheesemaking side. Jean-Baptiste had lots of experience from working the in the dairy industry in France, including a degree studying Comté production. He persuaded Dan and John to let him develop a huge 40kg Comté-style cheese akin to what he was accustomed to making. Hence, Templegall was born.
This style of cheese is incredibly difficult to make with milk from winter-fed animals, so it is only made throughout the summer months, when the animals are grass-fed, and sold the following year.
These are the first of the 2025 vintage to be released, at 12 months old. With time the mellow, sweet, caramel flavours will intensify as the cheese gets stronger and different flavours develop. As a cheese matures the fats and proteins break down, affecting the textures, flavours and volatile esters (smells), and the minerals can crystallise.
The box includes 500g of cheese: 250g of 12-month-old Templegall, freshly released from last year’s making, and 250g of 24-month-old Templegall.
