A Courtyard Dairy Selection
You can taste four distinctly different cheeses, all made by hand, by The Courtyard Dairy themselves, in this one-off special box.
The box includes
- Traditional Wensleydale – echoing the cheeses made in this region of the past, made as part of the research done into reinvigorating Wensleydale production in the Yorkshire Dales.
- Courtyard DairySoft – a soft delicate cows’ cheese taking influence from a historic cheese once made in the area in the 19th century: ‘York Soft’.
- Kalkaber – a continental mountain-style with echoes of Parmesan.
- Double Gloucester – made at The Courtyard Dairy to Andy Swinscoe’s Great Grandma’s handwritten recipe from 1912.
In 2024 Kathy and Andy of The Courtyard Dairy went into partnership with a local farm to make cheese on-site at The Courtyard Dairy in a purpose-built room next to the cheese shop. Making a range of cheeses, this is an opportunity to try them all.
The cows’ milk comes from less than five miles away. Out on Keasden Moor, the cows farmed by Colin and his dad Alan are grazed organically on diverse hay meadows and permanent pasture. Colin and Alan produce all of their own forage, creating a haven for local wildlife (including lapwings and curlews). The raw milk is collected whilst warm each morning just before cheese-making – straight from the cows after milking – before its short journey to The Courtyard Dairy to make cheese.
This pack contains 250g of each of Double Gloucester, Kalkaber (continental-style recipe), and Wensleydale, and 100g of Courtyard Dairy Soft (soft lactic).
This product will have 10 days shelf life from the date of delivery. Conveniently, at checkout you can choose a delivery date even well in the future if you would like your cheese delivering for a specific event.
