A collaboration showcasing two very different cheesemaking recipes; made on the same farm with the same equipment and same raw milk.
But distinctly different.

Includes a wedge each of:

  • Fellstone, a traditional Wensleydale type made by Tom & Clare;
  • An Alpine cheese-style, made by Alastair Pearson using his technical cheesemaking know-how learnt in Europe.

WhinYeats farm makes traditional Wensleydale cheese in the North of England using milk from their farm.
Alastair Pearson is a retired, ‘mountain-style’ cheesemaker (think Gruyere and Comte) who learnt his trade in the German mountains.
Last July, The Courtyard Dairy collaborated with them both to make a special one-off cheese using WhinYeat’s fabulous milk, Alastair’s cheese-making know-how and The Courtyard Dairy maturation cellars.
Now reaching maturity, it showcases the richness of their milk alongside the sweet, butter-scotch flavour you get to Alpine-style cheeses.
In this tasting pack you get 250g of this collaboration cheese to taste alongside 250g of Fellstone; (WhinYeats’s original cheese). It comes with notes and link to a short video explaining the differences in production and maturing.
