Yr Afr
Creamy, lightly vegetal flavours, pronounced goat note
One of Britain’s newest cheeses, Brad and Beth make this cheese by hand in North Wales using fresh raw milk from goats fed in the foothills of Snowdonia.
Yr Afr is based loosely on Crottin de Chavignol, and the French light goats’ cheeses often found in the Loire Valley. Aged for 3-5 weeks it forms a distinctive wrinkly rind that breaks down the vibrant, fresh interior to give it mushroomy, more vegetal notes that offsets a rich goaty-tang.
After getting the cheesemaking bug, Brad originally started making cheese in his own home in Rossendale, Lancashire, using frozen supermarket milk – with not too much success… Much research later, he realised the quality and freshness of the milk was probably key, and, in 2021, with his wife Beth they started their real foray into cheesemaking.
Obtaining a handful of goats, they milked them on their small holding, whilst at the same time carrying on with their full-time jobs. Beth’s job relocated her to North Wales, and so they upped and took everything. They soon found looking after a brand new family, two full-time jobs, milking goats, and making cheese in their spare time a bit too much. So in 2024 they passed on their goats to then nearby Snowdonia Goat Company, but continued using their fresh milk each day to make a traditional French-style goats cheese.
Yr Afr is based loosely on Crottin de Chavignol – those French light goats’ cheeses, often found in the Loire Valley – and aged for 3-5 weeks to form an edible ‘wrinkly’ geotrichum yeast and mould rind that breaks down the vibrant interior to give the mushrooomy, more vegetal notes which offset the goaty-tang.
Nearby cheesemaker Carrie Rimes (famous for the Brefu Bach ewes’ milk cheese) saw their potential and offered up space in her dairy to help get them started, as a springboard into making cheese full time.
Early 2025 saw Bradley able to take the jump, finally quit working full time elsewhere, and fully commit to making Yr Afr – truly a Welsh cheese of the future.
Yr Afr translates as ‘The Goat’ in Welsh.
