Settle Soft
Creamy and smooth, with a rich finish
This, delicate soft cheese is made by hand by Kathy at The Courtyard Dairy. The fresh, organic raw milk comes from 40 grass-fed cows grazing on nearby Keasden Moor, and the cheese is slowly set overnight . Once set, the curd is then gently hand-ladled, before being moulded and aged for three weeks.
As it ages, it forms a wrinkly rind that breaks down the delicate fresh cheese to give it a smooth texture and crème-fraîche, buttery, grassy flavours.
It takes influences from traditional soft cheeses made around York and Pickering in the 19th century.
To make this soft, delicate cheese the recipe involves adding a tiny amount of lactic starter bacteria and rennet to the raw milk, to allow it to express its ‘terroir’. By the next morning, after a long gentle set of the milk, the curd is delicately hand-ladled into moulds and left to drain creating a light, fresh, lactic cheese which, as it ages, develops the wrinkly yeast rind (geotrichium) that is natural to raw milk. This is the way that the historic soft cheeses from around York and Pickering were made. These delicate fragile, ‘light’ cheeses died out in the early 1900s as they did not travel well in the days of rail transport.
At three weeks old the yeast-rich rind has broken down the firm texture of Settle Soft to provide a smooth, creamy, milky-soft cheese.
The milk comes from cows out on Keasden Moor less than five miles away. These cows farmed by Colin and his dad Alan are grazed organically on diverse hay meadows and permanent pasture. Colin and Alan produce all of their own forage, creating a haven for local wildlife (including lapwings and curlews). The raw milk is collected whilst warm each morning just before cheese-making – straight from the cows after milking – before its short journey to The Courtyard Dairy to make cheese.
This product will have two weeks’ shelf life from the date of delivery. Conveniently, at checkout you can choose a delivery date even well in the future if you would like your cheese delivering for a specific event.
