Since 1885, Stag Bakeries has been a family firm supplying the Outer Hebrides with bread, cakes and biscuits.

In 2007 they discovered an ancient water-cracker recipe in the bakery archives.  Hence Stornoway water crackers were born, an instant hit.  Traditionally they don’t contain any leavening agent like yeast or baking powder,  so water crackers are notoriously hard to make; they are difficult to bake and need flame grilling.  Hence very few biscuit companies make them in that style.  It is this lack of ingredients that made them long lasting and ideal for sea voyages – hence their nickname “ships biscuit”.
