Chilcote Brick is made using milk from the Bennett’s own herd of goats in Staffordshire. Made similar to the great French goats cheeses of the Loire, the cheese is light and fresh with a lactic core, and delicate yeast-like rind which adds a herbaceous note.

Based on a classic French goat’s cheese log style and aged for 4 weeks using the Bennetts own goats milk from their 350 strong herd. The outside is a geotriucim mould that produce a thin undulating rind which
breaks the cheese down slowly to produce lactic, nutty and tangy flavours with a creamy breakdown.
The Bennetts were at the forefront of goat farming and cheesemaking in the UK staring in 1987 they created many iconic British goats cheeses. In recent years they have now gone to making all their milk into cheese (prior to that they were selling a large proportion to ‘Helen’s Dairy’, large commercial producers of goats milk products). The cheese is made naturally using homemade starter cultures, to truly capture their terroir.
Innes Log is one of their most recent creations – created to not have a thick aggressive rind so that this cheese would be less aggressive, goaty and powerful than some of their other cheeses.
This product will have two weeks shelf life from the date of delivery. Conveniently, at checkout you can choose a delivery date even well in the future if you would like your cheese delivering for a specific event.
