Dominique and Neil spent years researching the history of Gloucester cheese, in archive texts and at the British Library.  In 2018 they used this in-depth knowledge to create a special, old-fashioned version of Double Gloucester cheese in Gloucestershire.

Soon after, however, their milk source dried up, the farm production ceased and they stopped making their special cheese.

Not wanting to lose their brilliant cheesemaking knowledge and expertise, earlier this year The Courtyard Dairy invited Dominique and Neil to ‘keep their hand in’ and use their recipe to make the cheese at The Courtyard Dairy site in Yorkshire, as a one-off special.  The cheeses they made are now mature and ready for eating.

Aged for 6 months, it is smooth and savoury, with a gentle, buttery tang to finish.
