Washed in Somerset Cider Brandy, Wendolyn has a lactic fresh core similar to their sister cheese (Gorwydd Caerphilly), but the pink tinged washed-rind breaks down the cheese to give it a rich, savoury and fruity edge.

Todd Trethowan worked for Neals Yard Dairy before learning how to make Caerphilly from the famous Chris Duckett in Somerset. Twenty years ago he returned to Wales to restart production of traditional Welsh
Caerphilly. For many years no farmhouse Caerphilly had been made in Wales, until the Trethowan family (Todd dragged his brother Maugan into the fray) returned and set up production in Llanddewi Brefi (the Teifi Valley) on Gorwydd Farm in 1996.
In 2014 Todd returned the production of Growydd Caerphilly to Somerset, almost completing the circle by setting up not too far from Chris Duckett’s original farm. Ever in the search for making the best Caerphilly the Trethowan’s found Puxton Court Farm, near Weston-Super-Mare, was producing a brilliant quality of milk so relocated here to further improve their Gorwydd Caerphilly.
As part of this move they decided to develop a new cheese (named after Todd and Maugan’s Mum – Wendy), this involves taking a young Caerphilly wheel and repeatedly washing it in brine and Somerset Cider Brandy for 8 weeks. This produces a ruby-red rind and helps break down the lactic core to give the cheese more savoury rich and butter flavours.
This product will have two weeks shelf life from the date of delivery. Conveniently, at checkout you can choose a delivery date even well in the future if you would like your cheese delivering for a specific event.
