Baked St Jude cheese recipe – cheese-maker Julie Cheyney’s favourite

Ingredients (for two people)
6 cherry tomatoes
1 St Jude cheese
Five basil leaves
Salt, pepper and olive oil
Method
Half the tomatoes and place face up in a ramekin. Drizzle with a touch of olive oil before adding salt and cracker black pepper.
Bake at 200C for 30 minutes.
Take out of the oven and add finely chopped basil leaves over the top.
Add a St Jude cheese ontop of this then bake for a further 5-10 minutes.
