A classic French goats’ cheese made high up in the Limousin mountains; the high diverse pasture gives Bi Caillou a rich herbaceous flavour.

Made in the classic French lactic-style, Bi Caillou is fresh and grassy, with herbaceous notes.  The rich flavour comes from the diverse pasture in the Limousin.  The cheese is coated with (vegetable) ash then allowed to form a natural mould rind.
